Combo-Chicken is a meal you can prepare ahead of time and make enough to handle several meals with ease. Basically a chicken, rice and veggie meal combination. This recipe can be done in larger quantities depending on your needs and the number of meals you would like to get out of the recipe. 4 Boneless, skinless chicken breasts seasoned with Brett's BBQ Rub 2 Cups Brown Rice - cooked 1 Grilled Red Onion 2 Grilled Red Bell Pepper 4 Tbs. Teriyaki Sauce (thick kind) 1/2 tsp. Sesame Oil Cook Rice Put BBQ rub on chicken and grill until done. Let stand 5 minutes. Cut into cubes Grill onions and bell peppers until soft. Remove skin from bell peppers. Dice onions and peppers. Place everything into a large bowl and toss well. Split up into individual servings based on the amount of food you need for each meal and package individually. Enjoy! |
