| Deep Fried Turkey-
Very High Fat! (Very Good Too!) Cajun Deep Fried Turkey OK, so it's not a fitness food. It is Great!!!! Using a candy thermometer bring a deep pot of peanut oil to exactly 360 Deg. F. Rig a coat hanger around the turkey's back and legs and pin the wings down. Inject the bird with a mixture of peanut oil and Cajun seasonings in many places. Dust the inside of the bird with the dry spices. Put a 6-8 ft. pole through the wire and slowly lower the bird into the oil (2 person job) and lift it slightly as needed to prevent splattering until the bird is submerged. Cook for 3 minutes per pound. (I did it with a 20 pound bird is 7-8 Gals. Of oil and it was done in 50 minutes.) Notes: This must be done outside. Wear long heat resistant gloves. Be careful, oil will burn you good! Have a fire extinguisher ready. Do not over heat the oil, it will catch fire. The next time I do it, I'm going to try cutting in one part vegetable oil, peanut oil is about $9 per gal. Make sure the bird is completely thawed! |
