Paprika Scallops- Not Low-Fat(at all!) but great and easy for an off diet day. 1 LB. Fresh Sea Scallops 2 Tbs. Butter 1/2 Cup Cream 1/3 Cup Madeira Salt Pepper TT 1 Tsp. Paprika Dash Cayenne Pepper Sauté Scallops in butter over high heat for about 30 Seconds. Remove and place into bowl. Deglaze pan with Madeira and reduce to syrup. Remove pan from heat and slowly whisk in cream. Return to heat, add scallops (and juice), salt, pepper, cayenne, and paprika. Cook until scallops are done and sauce is reduced (only about 4-5 min.). Don't over cook scallops!
