Peanut Chicken- NOT Low Fat, but Good Peanut Chicken Skewers 6-12 Chicken breasts 1/2 Cup Peanut Butter - chunky 2 Tbs. Fresh grated garlic 2 Tbs. Fresh grated ginger 1/2 tsp. Onion Salt 1/2 tsp. Worcestershire 2 Tbs. Rice wine vinegar 2 Tbs. Honey 3 Tbs. Brown Sugar 1 Tbs. Chili Powder 1/2 tsp. Cayenne Pepper 1/2 tsp.Pepper 1/4 Cup white wine Slice breasts at an angle into 3-4 long strips each. Place chicken and wine into a sealable bag or container. Mix all other ingredients separately and divide in half, reserving the second half to pour over cooked meat later. Pour half of the mix into the bag with the chicken and wine and marinade overnight. Skewer the chicken so that each piece is pierces at least twice and pieces are not crammed too close together (they should touch but not be pressed tightly). Grill skewers for about 6-10 minutes over medium heat, turning several times.
