Spicy Chicken & Rice- This is an easy recipe that is also extremely tasty! You will need a rice cooker for this recipe. 6 Chicken Breasts - boneless and skinless - cubed 2 Measuring cups (from your rice cooker) of Small Grain Brown Rice 1 Large can Chicken Broth 1 Sm. Can Chipolte Peppers - chopped with juice 1.5 Ears Corn - sliced off of cob 2 Onions - sliced 1 Tbsp. Kosher Salt 1 Tsp. Pepper 1 Tbsp. Paprika 1 Tbsp. Chili Powder 1 Tbsp. Fresh Garlic - chopped 1 Tbsp. Olive Oil Place all ingredients into your rice cooker and stir together lightly. Cover and turn the rice cooker on. This will cook the chicken and rice mixture for at least an hour. Let stand with the cooker on warm for about 20 mins. EAT IT! You can cook this very easily and store it to eat during the week. Don't be afraid to make additions or subtractions from this recipe, but I found that small grain brown rice works the best. This recipe is a bit spicy. |
