Fish in White Wine-

This recipe is easy to prepare and takes little time. 1 Shallot - minced 1/2 C Sliced Mushrooms 1 Clove Garlic - minced 1 Tbs. Olive Oil 1/2 C White wine 2 Tbs. Water 1 Filet White fish (your choice) 1 Tbs. Cream Sherry Salt and Pepper Sauté shallots and mushrooms in olive oil. Add water if needed. Cook until almost all liquid is gone, the mushrooms will release some liquid while cooking. Add garlic, pepper, salt, wine, and sherry. Stir together, and simmer over medium heat. Season fish with salt and pepper. Place fish on simmering mixture to cook/steam fish. Remove fish when done. Reduce sauce and pour over fish. Serve with rice or potato and a green Veggie.
